Purchased today at Trillium Canton. 750mL bottle poured into Tulip glass.

Pours a brown body with a light brown head that reduces to leave spotty lacing.

Definitely let this warm up before trying to pick out aromas and flavors. As it warms, vanilla, banana, raspberry and caramel aromas are apparent. Coffee and chocolate too.

On the tongue it’s mocha forward, coffee-chocolate with raspberry undertones, sweet milk chocolate on the follow through, almond, vanilla, lightly bitter coffee on the finish. Moderately sweet. Medium body low carbonation.

An interesting beer for sure. Easy to drink and fun to try picking out the individual flavors. Good balance i must say.

Hill Farmstead Civil Disobedience 27

This batch was blended and packaged in February 2018, woven from several unique threads—including wine barrel-aged Dorothy; puncheon-aged Anna; an experimental Farmstead® ale featuring Perle hops; and nearly 14-month-old wine barrel-aged Brother Soigné.

Poured from a 750mL bottle into a hull farmstead bulb glass.

Pours a straw body with a frothy white head that reduces to leave spotty lacing.

Aromas of citrus and barnyard funk, green apple, tart overripe stone fruit, pineapple, old hops.

On the tongue I get wheat, fruity, tart citrus, Tons of oak, musty basement, lightly bitter hops on the follow through, barnyard funk and lightly sweet aftertaste. More oak on the finish. Beautifully delicate flavors and easy drinking body with low carbonation.

I really enjoyed this one – comparable to the more well known HF saisons IMO.
