Hill Farmstead Civil Disobedience 15

A blend composed of beers from a diversity of barrels ranging from 16 to 30 months and further aged on organic, hand peeled mangos… many, many mangos

Final Rating: 4.74/5
look: 4.5 | smell: 4.75 | taste: 4.75 | feel: 4.75 | overall: 4.75

Poured from a 750mL bottle into a Hill Farmstead stemmed glass.  Bottled 8/12/15.

Pours a cloudy orange body with a 2 finger white head that reduces fairly quickly to leave spotty lacing and a ring of retention.

Lots of funk and fruit on the nose, citrus and tart fruit skins, pepper and mango definitely comes through as well as some oak and white wine, grapes.

On the tongue.. upfront I get immediate tartness, lots of tart fruit, mango, white wine, grapes, funk, peppery saison yeast, oak, follow through is more mango and possibly banana. The finish is very dry, crisp, refreshing, medium high carbonation. Overall very flavorful and complex.

I really enjoyed this variant of Civil Disobedience. Nice tart saison qualities with a subtle mango taste. Balanced and complex.
